Mushroom Chili

Beans need time to soak until they are soft. Once you add tomato they will not get any softer!

Mushroom Chili

Ingredients

Choice of beans! - I used Black beans, lentils, and navy beans

Prefer fresh mushrooms - canned mushrooms will work in a pinch

Tomatoes - fresh if you have them! I use the jumbo can from Costco/Sam's Club etc. 

1 White Onion

Sea Salt

Pepper

Chili powder of your choice

2 Garlic cloves or powder - to taste

Shredded cheese


OPTIONAL: Ground Beef / Turkey/Chicken OR Andouille Sausage

Preparation

Soak the beans until they are soft - this may take 24 hours (I also cook in the water if needed to help to speed up the soaking process) check beans are soft (no crunchy ones - mine were aldente! so I ate around the beans.)


Once beans are soft drain the water then add all other ingredients and cook minimum 6 hours in the slow cooker to have flavor combined to your desired taste!


Serve with shredded cheese and enjoy!
