Gluten Free Before it was a thing?!

When I first found out I was Gluten Intolerant there was nobody to ask for alternatives. The cost of any kind of gluten-free flour was outrageously priced and extremely limited. In 2008 I sat down and told my boss and friend that my diet had just been limited to meat and potatoes, and if I was lucky the occasional side of vegetables. That was a hard day and a few tears may have been shed.


This was the beginning of my journey! There have been ups and downs along the way. Wins and major fails!


A few years back I learned the hard way how to test dry beans are soaked long enough to add tomato sauce... aldente beans are not good! 😳


One of my more frequently asked-for meals is Chicken Noodle Stew.


I am hoping my readers will share their recipes as well as find comfort in mine. I may alter your recipe when I cook for my family and share back what I did to make it work for the allergies in our home.
